
Fluffy pancakes

Delicious fluffy American pancakes are always a hit on the brunch table, and with this easy recipe, you'll have pancakes on the table in no time.

This recipe makes about 8 pancakes:
250 grams of wheat flour
1 teaspoon baking powder
1 teaspoon vanilla sugar
1 pinch of salt
2 tablespoons sugar
2 eggs
2.5 dl milk
1/2 dl rapeseed oil

Procedure:
Mix the dry ingredients together in a bowl. Separate the egg yolk from the egg white and set the egg white aside. Add the egg yolk, oil and milk to the dry ingredients and stir to form a dough.
Beat the egg whites until stiff and carefully fold them into the batter.
Fry the pancakes in butter over medium heat until golden.
Top the pancakes with berries and, if desired, skyr with chopped strawberries.
